The recipes on this site are of authentic South Louisiana origin. A few are my own, some from family and friends and some are contributed to the site. There are two categories here, one is Traditional and the other is Modern. It's all Cajun Cooking and Creole Cooking.

Traditional recipes are those whose names ring through the years as Louisiana Cooking Classics such as Chicken Gumbo and Crawfish Etouffee..

Modern recipes are those that Louisiana cooks have concocted  and are not necessarily "Traditional", but, have a Cajun Touch to them. These can also be "twists" on the original themes of traditional dishes.

Your Cajun recipe's are very welcome, but, I ask that you follow the simple Guidelines (click here).
