Cooking Louisiana  -  Cracklin' Cornbread
Cracklin' Cornbread is an old southern dish that is really good. I'm not going to give a recipe for cornbread since I'm sure you already have that.

For cracklin' cornbread just use your regular recipe or even the store-bought mixes. I like to use about 1/2 cup of crushed cracklins' per 1 cup of cornmeal in your recipe. I would guess you could actually use crushed fried bacon or even large prepared bacon bits. If you use bacon bits put them in the milk you'll use in the cornbread recipe and let them sit for a few minutes to re-hydrate.
