Cooking Louisiana - Potato Salad

Potato Salad is a favorite "go with" for Gumbo and Barbecue in South Louisiana. This Potato Salad recipe is mine and is simple yet tasty.

6 - 7 cups red potatoes peeled and cubed 1" (if they're fresh picked don't peel them)
5 hard boiled eggs
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped bell pepper
1/2 cup chopped green onion
1/4 cup chopped fresh parsley
1/2 tsp garlic powder
1 tsp. creole seasoning
1/2 tsp. salt
1/2 tsp fresh ground black pepper
2 pinches ground thyme
1/4 cup milk
1/4 stick butter (melted)
3/4 cup mayonnaise
1 tbs. yellow  mustard
1 tbs. sweet pickle relish (use sour if you prefer)
Paprika and whole parsley leaves to garnish

Boil potatoes until fork tender. In a small bowl put all vegetables and 1 tbs. water. Cover bowl tightly with plastic wrap and microwave until vegetables are soft. Peel eggs and mash. In a large bowl roughly mash potatoes leaving them very lumpy. Add all other ingredients. Fold to mix well. Let stand for 10 minutes or so and fold again. Let stand for another 10 minutes and taste. Add seasonings if needed. Smooth top of salad, sprinkle paprika and add 3 - 5 parsley leaves to garnish.
