If you're a fried mushroom person you may like this. Let me start by saying that mushrooms are sponges in that they will soak up moisture. I just figured I'd take advantage of that in a Cajun way. You can read fried mushroom recipes and they all say they want crispy... If I want crispy I'll eat potato chips; I can make crispy on the outside with flavor on the inside.

Mushrooms are a vegetable and unlike other vegetables need to be cooked a little; not much, just a little... kind of like an oyster or shrimp.
