The cookbook, "Bayou Lafourche", has 791 old and new Cajun recipes, some very old and simple to prepare.  Our Cajun friends and family love the memories the Bayou Lafourche recipes bring to mind of their childhood in Southeast Louisiana. Due to the fact that my father was a diabetic, my mother learned how to convert many Cajun recipes to lowfat/diabetic recipes.  Bayou Lafourche includes 100 of these flavorful and healthy recipes.

I was given the inspiration to write this book after I was diagnosed with stage 3-1/2 liver disease (out of 4 stages).   I had been seriously ill for 2 years and desperately needed a liver transplant.  My mother took me to an old woman to be prayed on and I was healed.  My doctor confirmed it when he took me off the transplant list only a few months ago.  (My story is in the book, and has renewed the faith of many people).  I felt that I needed to do something to express my appreciation to God, and the idea of the cookbook came to mind.  I made a promise that a percentage of the proceeds from the book would be donated to Ochsner's Hospital in my name, and an additional percentage would be donated to Children's Hospital in my deceased son's name.  He died at age 8. 

We truly did not know the book would be such a success.  There is rarely a day that goes by that we do not get a phone call or mail asking for copies of the book.  In recent weeks we have actually sold whole cases of books at a time, and then received reorders from these same people.  People are actually taking it upon themselves to sell the books for us, just because they like the book so much, and want to help because of the fact that some of the money will go toward liver research. I'd like to publicly thank all of you who have done so much to help.
